A lighter and healthier Avocado Green Goddess Dressing that’s ready in under five minutes! Fresh and creamy, it’s a great way to use up the herbs in your fridge.

Ingredients
½cupmixed herbs, like basil, mint and dill, packed
240gthick Greek yogurt*
½medium avocado
2tablespoonslemon juice
½teaspoonsalt, or to taste
½teaspoonpepper, or to taste
Instructions
Pick the herbs, keeping the tender stems and discard and woody ends. Set aside.
½ cup mixed herbs
To a food processor, add the yogurt, avocado, herbs, lemon juice and salt and pepper. Pulse until well combined and smooth.
240 g thick Greek yogurt*, ½ medium avocado, 2 tablespoons lemon juice, ½ teaspoon salt, ½ teaspoon pepper
Taste and adjust seasoning if needed.
Serve as a salad dressing, dip or sauce.
Notes
Storage. Any leftover Avocado Green Goddess Dressing can be stored for 2-3 days in the fridge. Place leftover dressing in a container, place some cling film over the exposed surface and press down to remove the air. Cover with a tight fitting lid and store in the fridge. Note that the colour will dull over time, but still retain in greenness and taste.Greek yogurt. I use Farmers Union Greek Style All Natural Yogurt because of its thickness and flavour. Make sure to use a thick Greek yogurt.
