  • I had leftover cheese curds from @makerandmonger so I made this Vegetable and Cheese Curd Frittata! Get the recipe here! Ingredients: 🧀2 tablespoons olive oil 🧀 1 zucchini, sliced into thin rounds 🧀 200g mushrooms, chopped 🧀 4 eggs 🧀 1/4 cup milk 🧀 1 cup cheddar cheese, shredded 🧀 1/4 cup fresh herbs, I used a mix of thyme and oregano 🧀 Salt and pepper 🧀 Knob of butter 🧀 1 shallot, diced 🧀 1/3-1/2 cup cheese curds 🧀 2 tablespoons toasted pine nuts, optional Directions: 1. Preheat the oven to 180C. 2. In a 20cm, oven proof frying pan, heat the olive oil over medium heat and sauté the zucchini and mushrooms until softened and starting to brown, around . Remove from the frying pan and set aside. 3. In a small bowl, whisk together the eggs, milk, shredded cheddar, herbs and season with salt and pepper. Set the mixture aside. 4. In the same pan, melt the butter over medium heat and cook the shallot for 3-4 minutes, until it starts to soften. Turn the heat down to low and add the egg mixture, swirling the pan to distribute evenly. 5. Scatter the zucchini and mushrooms on top, followed by the cheese curd chunks and the pine nuts, if using. Cook on the stove top for 3-4 minutes or until the sides of the frittata are just starting to set. 6. Transfer the pan to the oven and cook for a further 6-8 minutes or until the cheese curds have melted and the centre has just set.   • Even if you only love one Ghibli movie, you have to visit a Donguri shop - the only official Ghibli merch stores in Japan! They stock everything, from tea pots and tea cups, to jewellery and pins, from clothes and socks to art and puzzles, from cookware and lunchboxes to plushies and stationery. They even have special themes from time to time with unique merch and the cutest displays - last time I was there it was all about Kiki. There are many stores around Tokyo and Japan, but the one I visited was at the base of the Sky Tree in the Solamachi shopping centre (LOTS of food stores inside!).
