Seriously. These are addictive, especially when they’re fresh and still warm, spread out on the tray, just calling out for you to try one, two, five, more.

The first time I made them, there weren’t any leftovers. I used half for another dish I was making and ate the rest over the course of day straight off the baking tray, they’re that moreish!

Make them and come back and tell me you didn’t do the same.

Ingredient List for Spiced Honey Glazed Walnuts

  • Walnuts. Obviously, they’re the star of the show! If you’re using walnuts you’ve found in the back of the panty, give one a sniff and a taste to make sure they haven’t gone rancid first.
  • Honey. The sweet co-star that makes the star of the show shine! Floral or richer, heavier honeys both go well with walnuts. You can use rice malt syrup as a straight swap but maple syrup can often be too runny to really emulsify and cling to the walnuts; just something to know before you try a substitution.

  • Butter. Just enough to emulsify with the honey and create a sauce to coat the walnuts in. Helps them to set and cling to the nuts after they’ve cooled as well.
  • Flavourings. I used cumin seed because I first made these spiced honey glazed walnuts to bulk out some veggie tacos (do you want the recipe?), but you can change it up to suit your tastes or for whatever you have on hand. Walnuts pair well with these flavours: cinnamon, cayenne pepper, chilli flakes, coffee, dried figs, fennel seeds, glazed ginger, orange zest, vanilla and white pepper. And finish it off with a sprinkle of sea salt.

Spiced Honey Glazed Walnuts

Ingredients

  • 1 tablespoon butter
  • 2 tablespoons honey
  • ½ teaspoon cumin seeds, see notes
  • 1 cup walnuts
  • ¼ teaspoon flaked sea salt

Instructions

  • Line a baking tray with parchment paper and set aside.
  • In a medium sized frying pan, melt the butter over medium heat. Add the honey and cumin seeds (or any other spices you’re using) and stir until the honey becomes runny and just starts to bubble. Add the walnuts and mix quickly, making sure all the walnuts get coated in the honey butter.
    1 cup walnuts, 1 tablespoon butter, 2 tablespoons honey, ½ teaspoon cumin seeds
  • Continue to cook and stir for 3-4 minutes, until the walnuts warm and become fragrant. Sprinkle with flaked sea salt.
    ¼ teaspoon flaked sea salt
  • Pour the walnuts out onto the lined baking tray and working quickly, spread them out with a spatula so they’re in a single layer and not clumped together. Set aside to cool and firm up before storing them in an air-tight jar. Store at room temperature for a week.
