Let’s face it, everyone thinks everyone else’s food tastes are weird.
Flavour, texture and diet all play a part in what we each eat, and don’t eat. And we’ve all got that one friend that eats something we just can’t believe they’re willing to put in their mouth.

Your Tastes Matter
But it’s not just food itself. It’s also flavour combinations.
And while there are some well-known and rightfully coveted combos out there (salted caramel, apples and cinnamon, salmon and cream cheese, plain chips and chocolate), there are also flavour combinations that make some of us gag (olives and white chocolate, pickles and orange juice, avolattes).
I’ll admit it took me a while to try new foods and flavour combos growing up. And to this day, I smell a new food before I try it; if it smells funky in an unappealing way and my nose scrunches up, I ain’t eating it.
So I was skeptical when I was first told to try ricotta and peanut butter. Ricotta is CHEESE. Cheese with peanut butter? But I forgot what a wonderful neutral vehicle ricotta can be, and a little leftover, tasted with the teeniest tiniest bit of peanut butter proved to be a very good gamble.
Because let me tell you, for some bizarre reason, it JUST WORKS.
Customise it for you
This breakfast / snack / laziest of dinners evolved over time, and is highly customisable. I find the flavour combo yummy and satisfying, but it can be chopped and changed to suit your tastes and what you have available in your pantry. You can:
- Swap out the peanut butter for any other nut butter or spread. A chocolate spread or Nutella would even work, if that’s more your thing.
- Skip the banana if the misunderstood fruit offends you.
- Switch out the honey for rice malt syrup or even golden syrup, if you want to be extra. Replacing the honey with a light smear of jam or jelly could also work.
- Get creative with your topping sprinkle; If you live in Australia, you can get the Power and Go brekkie sprinkle from the scoop and weigh stations in selected supermarkets, which is my usual go to. But you can also use sesame seeds, sunflower seeds and pepitas, or even a small amount of your favourite granola over the top. Finely shaved chocolate is also a surprisingly good topping choice!

Peanut Butter, Banana and Ricotta English Muffins
Ingredients
- 1 English muffin
- 1 tablespoon peanut butter
- 2 tablespoons ricotta
- ½ banana, sliced
- 2 teaspoons honey
- 1-2 teaspoons toppings, optional, see notes
Instructions
- If needed, slice your bread of choice in half and toast to your liking.
- While still warm, spread peanut butter over both pieces. Top with ricotta, smoothing it over the peanut butter.
- Add slices of banana, spoon on the honey and sprinkle on some toppings.
- Grab some coffee or tea, a book and enjoy.
